This challenge is inspired by the fourth section of Openlabs podcast MATLABORATORY - about food, science and society. Section four is about our eating habits, and about changing them.
# 4 So we get the world to eat smarter Food lab on acast

According to all forecasts, the world's population will increase dramatically over the next few decades. Ensuring that food production keeps pace with population growth, without risking depleting the earth's resources, while ensuring that those who are already hungry and undernourished are satisfied - that is the biggest challenge our global food production has ever faced.

An important part of ensuring that there is food for everyone is changing our eating habits. We need to replace climate-intensive and resource-intensive products against freshly produced, nutritious and good foods.

Swedes are often curious about food, and open to testing new dishes and products. For example, the market for vegetarian products has increased significantly compared to a few decades ago, and dishes from all parts of the world are part of our everyday life. But this hasn't happened overnight.

In the fourth section of Openlabs podcast The Food Laboratory, we start from the question: Is it possible to change people's food preferences? Is it possible to get people to see new raw materials such as food, food that we previously could not even see in our wildest fantasies as food? We get to meet people who through courage and conviction managed to bring in new products on the market and partly changed our way of eating.

Enligt alla prognoser kommer jordens befolkning öka dramatiskt de närmsta årtiondena. Att se till att matproduktionen håller jämna steg med befolkningsökningen, utan att riskera att utarma jordens resurser, och samtidigt se till att de som redan hungrar och är undernärda blir mätta - det är den största utmaningen vår globala matproduktion någonsin ställts inför.

En viktigt del i att försäkra att det finns mat till alla är att förändra våra matvanor. Vi behöver ersätta klimatintensiva och resurskrävande produkter mot schysst producerade, näringsriktiga och bra livsmedel.

Svenskar är ofta nyfikna vad gäller mat, och öppna för att testa nya rätter och produkter. Exempelvis har marknaden för vegetariska produkter ökat markant jämfört med några tiotals år sedan, och rätter från alla delar av världen är en del av vår vardag. Men detta har inte skett över en natt.

I fjärde avsnittet av Openlabs podcast Matlaboratoriet utgår vi ifrån frågeställningen: Går det att ändra folks matpreferenser? Går det att få människor att se nya råvaror som mat, mat som vi tidigare inte ens i våra vildaste fantasier kunde ses som livsmedel? Vi får möta personer som genom mod och övertygelse lyckats få in nya produkter på marknaden och delvis ändrat vårt sätt att äta.
