This challenge is inspired by the first episode of Openlab's new podcast MATLABORATORY - about food, science and society. The first section of the pod is about fragrance and taste from different perspectives.
# 1 Our most underrated mind | Food lab on acast

When people are confronted with the question of which mind they can most likely lose, many just answer the sense of smell. However, research has shown that people who lost their sense of smell suffer greatly from depression.

Fragrance and taste have a great impact on our quality of life. Among other things, the research shows that fragrance is closely linked to pleasure. First, it is physically linked to the same parts of the brain as pleasure through the other senses. Reduced activity in this part of the brain therefore makes us more easily depressed.

Age and illness can cause us to have a reduced sense of smell and taste. But the loss of sense of smell need not be permanent. We also have the opportunity to train our fragrance and taste senses, and memories and sensations of different scents linked to specific experiences.

Places with a cleaner environment and fewer odor contamination also make smells more prominent - both those we experience as good and as disgusting. As the population gets older and at the same time healthier, our sense of smell is also improved on a collective level.

One theory is that fragrance, our perhaps most underestimated mind, and in the long run taste, will play an increasing role for us in the future.

The importance of fragrance and taste, now and in the future, raises many exciting questions and challenges: How can we to a greater extent take into account fragrance in community building and community planning? How do we create sites, products, solutions that enhance positive impressions through fragrance, or lack of fragrance? How can we make it easier to train a better scent and taste? How can we actively use scent and fragrance research to increase our quality of life?

#1 Vårt mest underskattade sinne | Matlaboratoriet​ on acast

När människor ställs inför frågan om vilket sinne de mest kan tänka sig att förlora svarar många just luktsinnet. Dock har man genom forskning sett att personer som förlorat sitt luktsinne lider i hög grad av depression.

Doft och smak har en stor inverkan på vår livskvalitet. Bland annat visar forskningen att doft är nära kopplat till njutning. Dels är det fysiskt kopplat till samma delar av hjärnan som njutning genom andra sinnen. Minskad aktivitet i denna delen av hjärnan gör oss därför lättare deprimerade.

Ålder och sjukdom kan göra att vi får nedsatt doft- och smaksinne. Men förlust av luktsinne behöver inte vara permanent. Vi har också möjlighet att träna upp vårt doft- och smaksinne, och minnen och förnimmelser av olika dofter kopplat till specifika upplevelser.

Platser med renare miljö och färre luktföroreningar gör också att lukter blir mer framträdande - både sånna vi upplever som goda och som äckliga. I och med att befolkningen blir äldre och samtidigt friskare förbättras också vårt luktsinne, på ett kollektivt plan.

En teori är alltså att doft, vårt kanske mest underskattade sinne, och i förlängningen smak, kommer spela allt större roll för oss i framtiden.

Betydelsen av doft och smak, nu och i framtiden, väcker många spännande frågor och utmanignar: Hur kan vi i högre grad ta hänsyn till doft i samhällsbyggandet och samhällsplaneringen? Hur skapar vi platser, produkter, lösningar som stärker positiva intryck genom doft, eller avsaknad av doft? Hur kan vi underlätta för att träna upp en bättre doft- och smakförmåga? Hur kan vi aktivt använda doft och doftforskning för att öka vår livskvalitet?
